Ingredients
  • 1 lb ground pork
  • 1 clove garlic
  • 1 tbsp ginger
  • 1 tbsp oil
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp sesame oil
  • 2 tbsp cornstarch
  • 1 tsp white pepper
  • Rice paper
  • 1 package of rice noodles
  • Iceberg lettuce
  • Carrots
  • Cucumber
  • Jalapeno
  • Red pepper
  • Green onion
  • Pickled veggies
  • Cilantro
  • *you can use all of some of these veggies along with any others you want to add.
Directions
  • Step 1 Start by adding oil to a pan on medium heat, add in garlic and ginger. Sauté until fragrant (about a minute).
  • Step 2 Add in the ground pork and let brown for a few minutes.
  • Step 3 Add in the soy sauce, fish sauce, and sesame oil. Mix everything together and turn the heat down to med-low. Let simmer until the pork is fully cooked.
  • Step 4 Add in the cornstarch, this allows the sauce to stick to the ground pork.
  • Step 5 Season with white pepper.
  • Step 6 Take the ground pork off of the heat to cool.
  • Step 7 While the pork is cooling, cut all of your vegetables into thin strips.
  • Step 8 Cook the rice noodles to package directions.
  • Step 9 Prep your area to start rolling the wraps. You will need a big bowl filled with water to wet the rice paper. The cooked rice noodles, cut up veggies, herbs, and ground pork all within reach.
  • Step 10 Start by wetting your rice paper in the water for about 10 seconds. Once it is malleable, place it flat on the counter and place some rice noodles in the center, followed by a spoonful of ground pork, then topped with vegetables and herbs.
  • Step 11 Take the portion of the rice paper that is closest to you and fold it over the filling, like you are rolling a burrito. Then fold both of the sides in and roll. The rice paper will stick to itself.
  • Step 12 Repeat until you run out of filling.
  • Step 13 Serve with Nuoc Cham and iceberg lettuce leaves.
  • Step 14 *alternately you can include the lettuce inside the roll. You would place the fillings inside the lettuce before rolling.

Served with Nuoc Cham:

1/4 cup water

1/4 cup fish sauce

2-3 thai chilis sliced thin (depending on your heat preference)

2 tbsp lime juice

This is such a fun recipe to get creative with! Change the protein, change the filling, or do both.
