Is anyone else out there obsessed with mac and cheese?
I have been perfecting my mac and cheese recipe for years, and I have come up with the perfect combination… poblanos + mac and cheese. Two of my favorite things combined into one cheesy pasta dish sounds perfect to me!
Poblano Mac and Cheese

Ingredients
- 1 package elbow noodles
- 1 tbsp butter
- 2 tbsp flour
- 1 cup milk
- 1/2 cup heavy whipping cream
- 2 heaping cups of assorted shredded cheese (I normally use a combination of parmesan, cheddar, mozzarella, and Colby)
- 2 poblanos (roasted, peeled, and chopped)
- 1 tbsp Buffalo sauce (optional)
- 1 tbsp Dijon mustard and/or horseradish (your preference)
- Salt & pepper to taste
Directions
- Step 1 Cook noodles to package directions.
- Step 2 Roast the poblanos on high in the oven or on a grill (5 min on each side). The skin should look burnt when you pull it out of the oven. Let cool and the skin will peel right off. Chop up and save for later.
- Step 3 To make the cheese sauce start by melting the butter.
- Step 4 Once the butter is melted and add flour on med-low heat to make a roux, cook until lightly golden brown.
- Step 5 Then add in your milk and heavy whipping cream. Keep on medium to low heat for about 10 minutes stirring occasionally, or until thickened.
- Step 6 Once the sauce has thickened add in your cheeses. I use what I have available – a little bit of Parmesan, cheddar, Colby, and mozzarella.
- Step 7 Let the cheese melt, and adjust with more cheese or more milk if you do not like the consistency.
- Step 8 Add salt and pepper and taste.
- Step 9 Add in the Buffalo sauce and Dijon mustard (and/or horseradish)and taste again for seasoning.
- Step 10 Add poblanos to the cheese sauce and pour over your noodles.
I serve mine topped with pickled veggies, more buffalo sauce, and ranch drizzled on top.
