Don’t sleep on a simple pickled veggie. It is such a good item to keep on hand in your fridge whenever you are in need of something acidic and fresh in your meal.
This recipe is so simple to make and just gets better the longer the veggies sit in the fridge in the pickling liquid.

Ingredients
- 1 tbsp rice vinegar
- 1/2 cup red wine vinegar
- 1/2 water
- 1 red onion, sliced thinly
- 1-2 jalapeño peppers
Directions
- Step 1 Mix together the red wine vinegar, the rice vinegar, and water
- Step 2 Add in your veggies
- Step 3 Let sit in the fridge for at least an hour or up to a few weeks
Here are some of my favorite veggies to pickle
- Red Onions
- Jalapeños
- Cucumbers
- Carrots
- Radishes
- Cauliflower
I will use these veggies on just about anything if I need a little brightness so I almost always have pickled veggies on hand.
