BLFGT (bacon, lettuce, fried green tomato)

The classic BLT meets the South. I have been obsessed with fried green tomatoes lately and could not resist substituting them for the tomato in a traditional BLT, thus the BLFGT was born – the perfect mix of spicy, acidic, crunchy, and salty.

Ingredients
  • Sourdough bread toasted
  • Bacon - 2 pieces per sandwich
  • Air fried green tomatoes (recipe below)
  • Iceburg Lettuce
  • Goat cheese
  • Cajun aioli (ingredients listed below)
  • 1 tsp cajun seasoning
  • ¼ cup kewpie mayo
  • 1 clove garlic minced
  • 1 tbsp sriracha
  • 1 tbsp lime juice
  • 1 tsp smoked paprika
  • Handful celery leaves chopped finely
  • Air-fried green tomatoes
  • 2 green tomatoes cut thick
  • 1 cup cornmeal
  • ½ cup flour
  • 1 egg
  • 2 cups milk
  • 1 tbsp cajun seasoning
  • 2 tbsp white vinegar
  • Oil
  • Salt
Directions
  • Step 1 Mix all of the ingredients together for the cajun aioli, set aside and make the air fried green tomatoes.
  • Step 2 Preheat your air fryer to 450 degrees.
  • Step 3 In a medium-sized bowl add the milk, white vinegar, and 1 egg, and mix everything together to combine.
  • Step 4 Cut your tomatoes into thick slices and place the bowl with the milk mixture.
  • Step 5 In a separate bowl add the cornmeal, flour, and cajun seasoning.
  • Step 6 Spray the bottom of the air fryer with oil.
  • Step 7 Take a slice of tomato and coat it in the cornmeal mixture, shaking off any excess, and then place it in the air fryer.
  • Step 8 Complete until the air fryer is full in a single layer.
  • Step 9 Spray the top of the tomatoes with oil and cook for 15 minutes in the air fryer, flipping halfway.
  • Step 10 Repeat until all of the tomatoes are cooked.
  • Step 11 When you take the tomatoes out of the air fryer, season lightly with salt.
  • Step 12 Toast the sourdough bread and then spread the goat cheese on both sides of the toast.
  • Step 13 Then smear on the cajun aioli (don’t be shy with it).
  • Step 14 Stack your lettuce, then bacon, fried green tomatoes, and then even more of the aioli.
  • Step 15 Place the top sourdough slice on top and enjoy the crunch as you cut it in half and enjoy!
